Roast Beef

What could be more comforting than Roast Beef? It's a Sunday dinner around here and one of Gregorys favorites.
If you go to the meat department at the grocery store, they actually carry a couple different kinds of roast, and I never remember what kind I bought the time before. I just look for one that looks nice and meaty and doesn't have a lot of fat on it.
While your at the store, pick up a bag of baby carrots, some red potatoes, a yellow onion, and some garlic ( I buy mine already minced)

I usually try and put the roast in the crock pot for 8-10 hours on low.
Add your carrots, cut up potatoes, onion, and garlic to the roast and you will have some great flavor with your roast.

Creamy Chicken and Noodles

Can you tell I use a lot of chicken? This one is a mixture of a couple Campbell's recipes mixed together.

1 can cream of chicken
1/2 a package of cooked and drained egg noodles
2-4 cooked chicken breats, shredded
1 can mixed vegetables

While the noodles are cooking, bring to a boil your cream of chicken, shredded chicken, and mixed vegetables. Drain noodles and add cream of chicken mixture. Stir together.

My favorite all time seasoning is from The Spice Hunter. It's the Grill Shakers roasted garlic flavor, and as of now, I can only find it at Sprouts. If you want a little extra flavor for this dish, I highly recommend this seasoning.

Mac n Cheese

On nights that I know my kids wont eat what Gregory and I are having for dinner, I make them Velveeta-shells and cheese sauce. Even easier than the "blue box" and my kids seem to like it better. Sams club has a box of 5 for about $7.
If you want some nutritional value, add some cooked peas or broccoli.

Chicken Enchilada Casserole

This is one of my Gregory's favorites!

1 medium onion diced small
2 TBS vegetable oil
1 dozen medium corn tortillas
4 C. shredded, cooked Chicken
1 can (15oz) tomato sauce
1 can (14 1/2oz) peeled tomatoes undrained, cut up
1 can green chilies (optional)
2 cans (2 1/4oz) sliced ripe olives, drained
3 C. grated Monterey Jack cheese
1 pkg. Lawry's Taco Seasoning
1/2 tsp Garlic powder

In a large skillet, saute onion in oil. Add chicken, tomato sauce, tomatoes, taco seasoning and garlic powder; blend well. Bring to a boil, then reduce heat and simmer uncovered for 15 mins. In a 13x9x2 in glass baking dish (spray with cooking spray for easy clean up), place 4 to 6 tortillas. Pour 1/3 of chicken mixture on tortillas spreading evenly. Layer with 1/3 of olives, and a 1/3 of cheese. Repeat layers 2 more times, ending with the cheese. Bake uncovered in a 350 degree oven for 30 to 40 minutes or until heated through and cheese melts (I usually bake it for about 20).
Makes about 8 servings. For a bigger crowd, double the recipe.
Serve with sour cream, mexican rice and salad

Pizza

Occasionally, I just want some pizza...and a night off from cooking. If you prefer an alternative to order out pizza, DiGiorno actually makes a pretty good oven bake pizza. And even better, if you're a Sams Club member, you can get a package of 3 for around $11! Put the other 2 in the freezer for those nights you just don't feel like cooking :)

Chicken Stroganoff

My friend Sarah served this at a Girls Night Out a while ago, and it was so good I had to have the recipe! Even better, it's super simple and my kids love it too.

2 boneless, skinless chicken breasts
¼ cup water
1 package dry Italian seasoning mix packet
8 oz cream cheese
1 can cream of chicken

Put the chicken, water and Italian seasoning packet in crock pot and cook on low for 6-8 hrs. After cooked, shred the chicken with fork and knife in the crock pot. Add cream cheese and cream of chicken. Cook for another 30-45 minutes. Serve over hot rice or noodles

Spaghetti

What could be easier than Spaghetti?!

My version of spaghetti:
Add spaghetti noodles to a boiling pot of water. (make sure to add a pinch of salt to the water)
While the noodles are cooking, brown some hamburger in a skillet. Add some garlic salt to the hamburger (my favorite). When the hamburger is brown, add Prego traditional sauce and continue heating. Drain noodles and add hamburger/prego sauce. My family likes their sauce and noodles stirred together.
Add some garlic bread and salad greens for side dishes and Valla! A fast, yummy, and filling dinner.

Shredded Chicken Tacos

Quick Tip: Anytime I know I have to shred chicken for dinner, I stick about 4 chicken breasts in the crock pot around lunch time. Heat on high for about 4 hours. The chicken will practically fall apart between the forks!
(If your chicken gets done before your ready for dinner, stick in a plastic bag and put it in the fridge)

When your ready, heat your skillet. Add your shredded chicken, 3/4 cup of water and a package of Taco bell seasoning. Follow directions on the package. While your chicken is cooking, get out tortillas, shredded pre-packaged lettuce (much easier), tomato's, cheese, sour cream, and taco sauce/salsa.
This dinner only takes about 15 minutes and tastes great!!!!

Lasagna

One of the easiest and best family dinners is Lasagna. Stouffers makes it easy with 3 different sizes and a variety of 6 flavors ranging from Vegetable Lasagna to their Lasagna with Meat Sauce (my family's favorite). Give yourself about 75 minutes for it to cook. Fresh salad greens and garlic bread are great sides to go along with this dish.
